The M.S. research thesis option requires a minimum of 24 credit hours of coursework and 6 credit hours of research (FDSC 8910 or NUTR 8910). Core courses include FDSC 8100, FDSC 8510 (or NUTR 8510), NUTR 8030, STAT 8010, additional credit hours of advanced-level courses may include courses in food science or in areas such as chemistry, nutrition, biochemistry, animal and veterinary sciences, microbiology, statistics, or cell biology. Only 6000-level courses and higher may be used for graduate credit, and at least one half of the 24 hours of coursework must be 8000-level or higher. Prerequisite courses must be completed before admission as a graduate student, whereas co-requisite courses may be taken concurrently but must be completed before receipt of the master’s degree. In addition, a minimum GPA of 3.0 is required to maintain good academic standing and to be eligible for graduation. Coursework must be approved by each student’s Graduate Committee which is comprised of a major advisor and at least two other faculty. The student must complete an in-depth research project, defend the research thesis to the Committee, and complete a thesis approved by the Committee and the Graduate School. -

Students apply a fundamental understanding of biological, chemical, physical, and behavioral sciences to the processing, preservation, quality evaluation, nutrition and health aspects, and utilization of foods. Our research and education programs integrate the disciplines of chemistry, microbiology, biotechnology, processing, engineering, toxicology, sensory science, product development, animal health, biochemistry, and nutrition to prepare qualified graduates for food-related careers in industry, government, and academia. The Food Safety educational program at NDSU was founded in 2001 to help meet the increasing need for individuals with food safety expertise in government, business, and academia. NDSU graduate faculty who participate in the food safety programs are from multiple colleges, and cover several areas of expertise including microbiological sciences, communication, public health, food and nutrition, and plant sciences. As our food system becomes more globalized and complex, it is increasingly important for public health professionals to engage consumers and members of the food industry including farmers, food processors, and food service workers. Monitoring and preventing the spread of foodborne disease, disseminating and enforcing key laws or regulations, and education the public on safe food handling practices are top priorities. These priorities can be achieved through utilization of innovative methods in the areas of molecular microbiology, biotechnology, science-based risk assessment and management, hygiene principles, food safety laws and regulations, and active surveillance programs. The NDSU MPH degree with a specialization in Food Safety will provide students with the necessary skills and knowledge to become vital frontline members working to keep our population and food systems safe and secure. Students have the flexibility to focus assignments and choose at least two electives based on their interests and professional goals. Topics of potential interest include: disease diagnosis and detection, prevention of disease spread in food systems, public health policy, and emergency responses to emerging food security threats. Application of these topics all build upon the food safety specialization curriculum and MPH foundational core course. -
